Unique Birthday Cake Flavors that Tastes Better than Chocolate

- Blueberry Cheesecake
Start with blitzing some digestive biscuits for the base. Pour the biscuit mix in a pan and press with your fingers. Refrigerate it while you prep the other ingredients. In a mixing bowl add cream cheese, heavy cream, lemon juice, sugar, lemon zest and mix well with a hand blender. Add the cream mix in the cake mold and label with a spatula. Refrigerate for at least 3-4 hours. To make blueberry compote add fresh blueberries in a pan with some lemon zest and castor sugar. Cool the compote to room temperature. Add the compote to the cake and top with some candied lemon wedges. This blueberry cheesecake is a delicious way to celebrate a birthday.
- Birthday Carrot Cake
In a large bowl add 3 eggs, 1/3 cup of melted coconut oil, 2 tablespoon of maple syrup, baking soda, 1 tsp of sea salt, 1 tsp of ground cinnamon, 1 cup of unsweetened applesauce, ½ cup almond milk, 1 ½ cups of grated carrot, 1 ½ cups of almond flour, 1 ½ cups of oat flour, 1 cup of chopped walnuts, 1 tablespoon raisins. Mix the wet ingredients with the dry ingredients and chill the mix for an hour. Divide the mix into three round baking trays and bake at 350 degrees for about an hour. For the cream cheese frosting, mix softened ½ cup butter with 200 ml of cream cheese topped with a drizzle of maple syrup. Once the cakes are completely cooled, layer with the cream cheese frosting. Top with candied pecans.
- Lemon Poppy Seed Birthday Cake
To make the cake batter, mix oatmeal flour, lemon zest, poppy seeds, egg, chia seeds, baking powder, buttermilk, coconut sugar, salt, and vegan butter. Grease a cake tin with baking spray and pour the mix. Bake at 350 degrees for 30 minutes. To make the frosting, whisk butter, cream cheese, icing sugar, vanilla extract, lemon juice, and zest. Spread the icing on the cake and garnish with fresh lemon slices.
